Ande ki piyosi

About:

Indian dessert
Ande ki piyosi can be explained as a richer variation of  the caramel custard. It has a very rich taste and this could be because its a traditional royal recipe from Hyderabad. 

Ingredients:

Cardamom Powder          1 Teaspoons
Ghee/ Clarified Butter       2 Tablespoons
Eggs                                 5
Almond Powder               ¼ Cup
Grated Khoya                  250 Grams
Sugar                               250 Grams
Saffron Colour                 (optional)

Method:

1.       In a bowl separate the egg whites and yolks. Whisk the yolks adding little by little sugar until it get creamy.
2.        In this mixture add almond powder, cardamom powder and ghee. Whisk this mixture well.
3.        Sieve the khoya so that it is nice and fine.Add this to the mixture and whisk it again and keep aside.
4.        Beat the egg whites.
5.        Add a tablespoon of sugar and whisk again. Beat well until they form peaks.
6.        Now add the first mixture to the egg whites mixture and gently mix.
7.        Grease a baking tray with ghee and pour the mixture in the baking tray.
8.        Preheat the oven to 250 degrees F (125 degree C) and bake for around 30 minutes.
9.       After 30 minutes, check, remove and cool. Cut them into desired shape and serve.

Asha Sagar Cake Recipe-Eggless

I call it the Asha Sagar Cake as the recipe is hers. She runs a beautiful Homestay in Coorg. Had this cake made by her- nd one of the most delicious ones I have eaten, and guess what? Its eggless :)

Eggless Chocolate cake:

Ingredients:
1.      Sugar   1 ½ cup
2.      Water     ½  cup
3.      Maida  1 ½ cup
4.      Cocoa    ¼ cup
5.      Soda bicarb 1 tsp
6.      Salt          ½ tsp
7.      Curd ½ cup   or ½ cup milk with 1 lemon squeezed
8.      Oil  ½ cup
9.      Vanilla essence- 1 tsp
Method: 
  • Take the sugar and water in a vessel over the fire. Boil till Sugar melts and syrup cools.
  • Mix Maida Cocoa, Soda bicarb & Salt and Sieve it well.
  •  Add Sugar syrup to the Above sieved mix and stir well so that no lumps are formed.
  •  To this add the curd & oil and beat well.
  • In the end add the vanilla essence.
  • Mix well
Oven method:
·         Bake for 30-35 minutes @ 180degree

Cooker method:
·         Line a vessel with aluminium foil
·         Pour the cake batter in that.
·         Keep the vessel on a stand in the cooker (no water)
·         Cover the lid without gasket or weight.
·         Cook 5 minutes on high flame and then low flame for 45 minutes.

Chocolate Frosting:

Ingredients:
1.      Sugar ¾ cup
2.      Cocoa ¼ cup
3.      Milk ¼ cup
4.      Butter  ¼ cup

Method:
·         Mix together sugar cocoa and milk and dissolve over fire
·         Sugar should dissolve well.
·         Take it off fire once all is mixed well and melted
·         Add butter to the sugar syrup and mix well
·         Cool a little and pour over chocolate cake.
